Final Product – a Bowl of Beef Stew

I don’t know about you, but I love cooking a hot meal when it gets below 70 degrees here in Florida. Some of you are laughing at me right now, but this is our Winter. My grandma used to cook us beef stew when I was growing up and I loved dipping a buttered piece of bread into it. Can I get an Amen for comfort food?

Last week we got a cold front and I knew it was time to whip out the Instant Pot or the slow cooker for a home cooked meal that would keep us warm. A few great things about this recipe, one, it makes a ton of servings and two, it is really inexpensive to make. For all of the ingredients I believe I spent under $20.00.

This isn’t our family recipe, I actually found this recipe on Target’s website. They have a really cool listing of featured recipes with an add to cart option so that you can purchase all of the ingredients you need quickly. This recipe is called, Rustic Beef Stew. Notes for Next Time

One thing that I suggest for this recipe is to thicken the broth. I like my beef stew to have a gravy like broth instead of a soupy one. This definitely has a vegetable soup style broth. Delicious, but if I make it again I am going to thicken the gravy. Pure Wow has quite a few options here.

My second suggestion is to add a little bit more meat than what this recipe calls for. Instead of 1lb, I will probably add 2lbs next time. The meat makes the stew if you ask me.

My last suggestion is to pair this soup with a stiff bread that you can butter and dip into the stew. It makes the whole dish and seriously is so yummy. We opted for a loaf of Italian bread from Publix’s bakery.
