Such an amazing recipe!

I cannot take credit for this recipe at all however, I did feel responsible for sharing the Fit Men Cook application as well as this Chicken Tinga Taco recipe because it was amazing. Darrin downloaded the app on his phone (it has a free and a paid version). We took inventory of our pantry and ordered the rest of the necessary ingredients through Walmart pickup.

About a week ago I made chicken carnitas in the Instant Pot and burnt them to ruins trying to roast them in the oven afterward. Needless to say, I was looking for redemption and I definitely got it with this recipe. Tacos are a staple at our house and I really enjoy that this recipe can either be made in the slow cooker OR the Instant Pot.

We used the Instant Pot. I would say when it comes to ingredients, we did need quite a few things to complete the recipe. However, we were able to get at least 8 meals out of the recipe so it would be perfect for meal prepping and making a variety of meals using the chicken throughout the week.

Usually you need to use the slow cooker and the low and slow method to get fall apart chicken goodness, but the Instant Pot delivered. The chicken was so easy to shred and had amazing flavor. There was also a ton of juice to keep the leftovers moist (do you hate me? haha).

Remove the chicken to shred and then put it back in the pot to cook on low for another 6 minutes or so.

Darrin is definitely going to opt for the paid version of the app and we plan on canceling our Home Chef to try out more recipes. If you use the app, I would love to hear your favorites so that we can try them.

On Valentines Day we cooked this recipe and made tacos. Darrin ate 5 tacos! So good. The recipe also has an avocado cream sauce which is bomb. Do not skip that step. It is so good. The next night we used the leftover chicken and avocado sauce to make rice bowls. We cooked white rice and black beans to pair with it. We ate the rest for lunch the following day.

This is definitely a MUST try recipe. The flavor is amazing and the nutrition facts are great. There are a ton of different ways you can use the chicken as well if you wanted to make it in bulk for the week.
